we are officially in what is in my opinion the worst time of the year. It’s cold, the sun is still going down early (though we’re on the upswing there), nothing is green outside, everyone is a little bit sick, and I just want spring time!
I find this time of year particularly difficult to eat even remotely healthy. The cold makes me want cozy soups or hearty pastas, and the mild seasonal depression makes me just want to survive off of boxed mac & cheese.
but that is no way to live, so we’ve got a recipe today with plenty of veggies, protein, and carbs!
