There has been a lot of chatter online lately regarding one-pot pastas. Primarily, this is because of Meghan Markle’s new Netflix show, where she makes a one-pot pasta in one of the episodes. The internet lost their minds. Which, to be fair, the internet weirdly loses their mind when that woman breathes the wrong way.

All the chatter inspired me to make a one-pot pasta of my own. Markle’s version included things like tomatoes, basil, garlic, and more. This version is a different flavor profile — with mushrooms and spinach as the leading ladies — but it still has the simplicity that makes it even more enjoyable.

Cooking the pasta in enough water that you don’t have to drain it causes the sauce to be starchy and slightly creamy without adding any cream. We mix in a bit of parm at the end to make it even creamier, too.
