we’ve got a special one today: 2 recipes in one post! first I’ll share my dupe recipe of Cava’s Garlic Dressing, then my Raw Tomato Pasta!


If you’ve never been to Cava, it’s like a mediterranean version of Chipotle. it’s phenomenal. one of their dressing options is their garlic dressing, which is essentially a looser version of the Lebanese garlic sauce, toum!
I’m so obsessed with it so I made it myself! and now you can too!

It’s super easy, let’s get into it:
Cava Garlic Dressing (aka Toum-ish)
ingredients:
1/2 cup garlic cloves
1/4 cup aquafaba
1/4 cup lemon juice
1 tsp salt
3/4 cup oil
instructions:
add garlic, aquafaba, lemon juice and salt to a blender or food processor. blend until smooth.
continue blending on low, slowlyyyyy drizzling in the oil until smooth and fully emulsified.
taste and add more salt if needed
tip! if the raw garlic taste is too strong for your liking, you can quickly drop the cloves into boiling water for about 30 seconds. this will remove some of the bite.



if you’re familiar with Spanish food, you may have had Pan con Tomate. which, is a toasted piece of bread that is rubbed with garlic and topped with a grated tomato and olive oil mixture. simple, but delicious. this raw tomato pasta is the exact same vibe, but with pasta!
the pasta: I used angel hair because I wanted something light and slurp-able, but another long pasta would work just as well here!
the tomatoes: try to use heirloom, ripe, juicy red tomatoes. I was only able to get my hands on one heirloom tomato and it was yellow, so I also used a plain slicer tomato. whatever you can get works!
