Beans are having a moment right now. And rightfully so, they’re packed with fiber and incredibly good for you. However, I am not obsessed with beans like some are. For me to want to eat beans they need to 1. taste amazing, and 2. have good texture.
So this dish is a roasted salmon with shallot-mustard topping, served atop super flavorful dilly beans! I use navy beans in this, as I think they have some of the best texture, but you could also use cannellini, butter beans, or whatever bean you prefer.

This is a super simple recipe that tastes and feels elevated. The shallot-mustard topping is tangy and punchy, and the dilly beans are herbaceous and bright. The rich fattiness from Atlantic salmon brings all these flavors together perfectly.
