happy monday my friends! does anyone else start the week eating really healthy and then by thursday we’re just relying on buttered noodles? same!

i’m doing a series on IG & TikTok called “trying to fall back in love with vegetables” for that exact reason! I found myself avoiding vegetables (aside from frozen peas, I love frozen peas) and just eating pasta pretty much all the time. so this is episode 2 and we are diving head first by making a raw vegetable recipe!

I present to you: the raw shaved asparagus salad

asparagus: the main ingredient. the star of the show. it is crucial for this recipe that you get good asparagus. what is good asparagus, you ask? great question. you know when you get asparagus in, like, November? and its really skinny? that’s not what we want here. for best results, head to the farmers market and get the thickest bunch of asparagus you can! it needs to be thick so that it can be shaved!

the dressing: you can always do whatever you want with the dressing, but the dressing I made for this dish was drinkably delicious. olive oil, mustard varietals, lemon juice, parm, and S + P.

other ways to serve this: it just occurred to me that this would be incredible with some spaghetti or angel hair and turned into a cold asparagus pasta salad? someone please try that and let me know how it goes.
