the friday roundup: an ode to june & early summer
Coconut Milk Curry Poached Salmon with Cilantro

Based on one of my most popular recipes, my Coconut Milk Poached Cod, this is a recipe inspired by the comments on the original recipe! many people asked if this could be done with salmon, suggested adding curry, and asking for alternatives to dill. so this is poached salmon with Thai red curry paste and cilantro. its delicious and easy!
Frozen Watermelon Margarita

I’m happy to drink a margarita any time of year, but something about the summertime just makes them better. this recipe rims the glass with Tajin (chili-lime salt) and uses frozen watermelon blended with tequila, lime, and more. so refreshing!
The Potato Salad of the Summer

every summer cookout (or 4th of July) needs a good potato salad. this one uses teeny tiny potatoes cooked and served whole, with a creamy lemony and mustardy dressing, and lots of herbs. plus, sausage!
Crab Pasta with Sungold Tomatoes & Saffron

I’ll die on this hill: crab is better than lobster! this pasta cooks down sweet sungold tomatoes (the yellow/orange ones), cream, a touch of saffron, and a hunk of lump crab meat. to dieeeeee for.
Salmon Tacos with Mango Salsa

if its not a fish taco, I don’t want it. and salmon is, arguably, one of the best fish varieties! this taco recipe is super simple roasted cubed salmon with spices, then paired with some avocado, an easy mango salsa, and queso fresco.
