I used sea scallops and would recommend that! I couldn't find any information on bay scallops not being okay, but sushi restaurants almost always use sea scallops for their scallop sushi (hotate), because they usually keep them whole and need the larger size. I think the flavor may be a bit sweeter and more firm too.
